Muncie, IN—One of downtown Muncie’s most popular eateries for the last 8 years has been Casa Del Sol, owned by Manuel Rodriguez Alonso.
Casa Del Sol prepares and serves fresh Mexican food, ranging from fajitas, tacos, quesadilla, steak prepared Mexican style, chile verde, chimichangas and seemingly everything in-between. Even vegetarian options. Casa’s food runs the gamut, from tasty taco salads to burritos as big as your head. Even bigger, maybe. A steaming, sizzling hot quesadilla plate, be it chicken or steak, always draws admiring glances and never disappoints. You can wash all this bounty down with margaritas, frozen or on the rocks, or tasty Mexican draft beers in mugs that take two hands to hold.
The menu has so many offerings, Manuel says it’s almost like a phonebook. “We have everything,” he said. “Even shrimp cocktail.”
While chicken dishes abound, Casa’s Pollo Toluca is something of a standout item. It starts with your thinly pounded-out chicken breast, then is topped with a queso cheese sauce, over which is crumbled a healthy amount of chorizo sausage. This is a combination that just plain works, the cheese sauce moderating the chorizo’s heat while enhancing the taste, and the chicken breast lending it substance.
Casa Del Sol features outdoor seating and on any given sunny day, you’ll find the patio full of patrons enjoying the food, fun and outdoor fellowship.

“Our current menu is constructed to fit our current Muncie customers and what they like,” Manuel said. “People just like everything on our current menu. It’s not easy for our customers to try something different, but I want to try to offer a more authentic Mexican option. So, we are working on a new alternative menu with different items we hope to introduce in a few months. It will be be something you can’t find in other Mexican restaurants around Muncie.”
